Sweet potato nori wraps

Stea­m­ed sweet pota­toes pro­vi­de the glu­co­se nee­ded for the­se nori sheet appe­ti­zers. The wraps are nice and crun­chy with cucum­bers, let­tuce and pep­pers. A deli­cious, unu­su­al snack that brings varie­ty to the kitchen.

Ingre­di­ents for 1 to 2 servings: 

  • 450 g pee­led and cut into sticks sweet potatoes
  • 4 Nori sheets
  • 2 to 3 tab­les­poons fresh­ly squeezed lemon, lime or oran­ge juice
  • 200 g leaf lettuce
  • 100 g red, yel­low or oran­ge peppers
  • 130 g cucum­bers cut into sticks (or cucum­bers pro­ces­sed with a spi­ral cutter) 
  • 1 cup sprouts 
  • 30 g leaf coriander

Pre­pa­ra­ti­on:

Cook the sweet pota­to sticks in a pot with a steam­er insert for 13 to 16 minu­tes until they are soft. Then let it cool down. 

Lay a nori sheet on the work sur­face, shi­ny side down. 

Drizz­le the leaf with a litt­le lemon juice. Spread the lemon juice over the leaf with your fin­ger until it is very light­ly coa­ted. Spread the ingre­di­ents for the fil­ling on one side of the nori sheet. Wet the free pie­ce with a few drops of lemon juice.

Now roll the sheet up tight­ly. Cut the finis­hed roll into bite-sized pie­ces or hal­ve it.
