blueberry coffee cake

This wild blueber­ry cof­fee cake is not only fat-free but also packed with various deli­cious fla­vors – bana­nas, blueber­ries, map­le syrup. A per­fect des­sert or break­fast to brigh­ten up your day and that of your loved ones!

Ingredients:

Preparation:

  • Pre­heat oven to 180 °C.
  • Peel the ripe bana­nas and place them in a lar­ge bowl. Mash with a fork or pota­to mas­her until smooth.
  • Add map­le syrup, coco­nut sugar and vanil­la pow­der to the mas­hed bananas.
  • Add some water to make the mix­tu­re smoother.
  • Mix ever­y­thing well with a whisk.
  • In a sepa­ra­te bowl, mix tog­e­ther the oat flour and bak­ing powder.
  • Add the dry ingre­di­ents and blueber­ries to the bana­na mix­tu­re and mix ever­y­thing tog­e­ther to form a dough.
  • Line a bak­ing pan with bak­ing paper, pour the dough into it and smooth it out.
  • Bake the cake in a pre­hea­ted oven at 180 °C for 35–40 minu­tes until gol­den brown. 
  • Use a tooth­pick to check if the cake is baked through (insert the tooth­pick into the midd­le of the cake. If the tooth­pick comes out clean, the cake is ready) 
  • Remo­ve the cake from the oven and let it cool completely
  • Cut the cake into equal sized pie­ces and serve.

Tip: Nice­cream ser­ve with it. I like to do it by sim­ply blen­ding fro­zen bana­nas with a litt­le oat milk or water in a high-per­for­mance blen­der and ser­ving it as “vanil­la ice cream”. It does­n’t tas­te like vanil­la ice cream, but I think it’s deli­cious just the way it is. You could add a litt­le vanil­la pow­der. You can also make fruit ice cream out of it, for exam­p­le by blen­ding fro­zen straw­ber­ries and bana­nas, then it beco­mes a deli­cious straw­ber­ry “cream” ice cream.
