Perfect for pampering your loved ones!
Ingredients:
- 3 ripe bananas
- 60ml maple syrup
- 30g coconut sugar
- 1 teaspoon vanilla powder
- A little water for consistency
- 175g Oat flour
- 1/2 tsp baking powder
- 65g wild blueberries
Preparation:
- Preheat oven to 180 °C.
- Peel the ripe bananas and place them in a large bowl. Mash with a fork or potato masher until smooth.
- Add maple syrup, coconut sugar and vanilla powder to the mashed bananas.
- Add some water to make the mixture smoother.
- Mix everything well with a whisk.
- In a separate bowl, mix together the oat flour and baking powder.
- Add the dry ingredients and blueberries to the banana mixture and mix everything together to form a dough.
- Line a baking pan with baking paper, pour the dough into it and smooth it out.
- Bake the cake in a preheated oven at 180 °C for 35–40 minutes until golden brown.
- Use a toothpick to check if the cake is baked through (insert the toothpick into the middle of the cake. If the toothpick comes out clean, the cake is ready)
- Remove the cake from the oven and let it cool completely
- Cut the cake into equal sized pieces and serve.
Tip: Nicecream serve with it. I like to do it by simply blending frozen bananas with a little oat milk or water in a high-performance blender and serving it as “vanilla ice cream”. It doesn’t taste like vanilla ice cream, but I think it’s delicious just the way it is. You could add a little vanilla powder. You can also make fruit ice cream out of it, for example by blending frozen strawberries and bananas, then it becomes a delicious strawberry “cream” ice cream.
