Ingredients for 3 servings:
- 450g sweet potatoes
- 1 large red pepper
- 2 cloves of garlic
- 2 medium onions
- 2 tbsp Tomato paste
- 2 Tea spoons Curry powder
- 2 Tea spoons turmeric
- 1 teaspoon Garam masala
- 1 pinch Salt
- 1 pinch pepper
- 200 g Red lenses
- 200ml Coconut milk
- 550ml Vegetable broth
Preparation:
Peel and dice the sweet potatoes. Also wash and dice the peppers. Peel and chop the onions and garlic.
In a pot, sweat the onions and garlic with a little water until translucent and then add the sweet potatoes and peppers. Now add the tomato paste, fry briefly and then add the spices.
Wash the lentils and add them to the pot. Immediately fill with coconut milk and vegetable broth and let the whole thing simmer for 30 minutes. It also tastes very good the next day.
