Sweet potato fries with guacamole

Sweet pota­to fries with a fresh guaca­mo­le (avo­ca­do cream) pre­pared in accordance with the reci­pe. A quick and healt­hy fast food that child­ren also enjoy.

Ingre­di­ents:

  • approx. 1.2 kg sweet potatoes
  • 140g toma­toes
  • 1 avo­ca­do
  • 1 tbsp lemon juice
  • 1/2 oni­on
  • 1 clove of garlic
  • 1 pinch sea-salt

Pre­pa­ra­ti­on: 

Peel the sweet pota­toes and cut them into chips. 

Line two bak­ing trays with bak­ing paper and spread the fries even­ly on them so that they do not touch each other. Bake at 180° C with a fan for approx. 30 – 35 minutes.

Mean­while, cut the avo­ca­do and mash the fle­sh with a fork. Add the lemon juice and salt. Then wash the toma­toes and cut them into small pie­ces. Final­ly, fine­ly chop the oni­on and gar­lic clove and add to the avo­ca­do with the sli­ced toma­toes. Mix ever­y­thing well.

The con­sis­ten­cy of the guaca­mo­le can be chun­ky or very fine, depen­ding on your pre­fe­rence. Fans of leafy cori­an­der add 1–2 stalks of fine­ly chop­ped coriander.
