Ingredients:
- approx. 1.2 kg sweet potatoes
- 140g tomatoes
- 1 avocado
- 1 tbsp lemon juice
- 1/2 onion
- 1 clove of garlic
- 1 pinch sea-salt
Preparation:
Peel the sweet potatoes and cut them into chips.
Line two baking trays with baking paper and spread the fries evenly on them so that they do not touch each other. Bake at 180° C with a fan for approx. 30 – 35 minutes.
Meanwhile, cut the avocado and mash the flesh with a fork. Add the lemon juice and salt. Then wash the tomatoes and cut them into small pieces. Finally, finely chop the onion and garlic clove and add to the avocado with the sliced tomatoes. Mix everything well.
The consistency of the guacamole can be chunky or very fine, depending on your preference. Fans of leafy coriander add 1–2 stalks of finely chopped coriander.
