Ingredients for 1 to 2 servings:
- 450 g peeled and cut into sticks sweet potatoes
- 4 Nori sheets
- 2 to 3 tablespoons freshly squeezed lemon, lime or orange juice
- 200 g leaf lettuce
- 100 g red, yellow or orange peppers
- 130 g cucumbers cut into sticks (or cucumbers processed with a spiral cutter)
- 1 cup sprouts
- 30 g leaf coriander
Preparation:
Cook the sweet potato sticks in a pot with a steamer insert for 13 to 16 minutes until they are soft. Then let it cool down.
Lay a nori sheet on the work surface, shiny side down.
Drizzle the leaf with a little lemon juice. Spread the lemon juice over the leaf with your finger until it is very lightly coated. Spread the ingredients for the filling on one side of the nori sheet. Wet the free piece with a few drops of lemon juice.
Now roll the sheet up tightly. Cut the finished roll into bite-sized pieces or halve it.
