zucchini sauce with caramelized onions

This low-fat zuc­chi­ni sau­ce with cara­me­li­zed oni­ons is deli­cious, healt­hy and per­fect as a dip or to enhan­ce dishes.

Ingre­di­ents:

Pre­pa­ra­ti­on:

  1. Cara­me­li­ze the oni­ons in the pan with the map­le syrup over medi­um heat until gol­den brown. This takes about 10 – 15 minutes.
  2. Mix cas­hews, zuc­chi­ni, oni­on pow­der, gar­lic pow­der, smo­ked papri­ka, lemon juice and optio­nal­ly salt into a homo­ge­neous mass.
  3. Mix the pure­ed mix­tu­re with the cara­me­li­zed oni­ons and serve.
