Ingredients:
- 200 g onions thinly sliced
- 6 tbsp maple syrup
- 50g Cashews (soaked)
- 130 g zucchini (diced)
- 1 teaspoon Onion powder
- 1/2 tsp Garlic powder
- 1/2 tsp smoked paprika
- juice of a medium-sized lemon
- sea-salt to taste
Preparation:
- Caramelize the onions in the pan with the maple syrup over medium heat until golden brown. This takes about 10 – 15 minutes.
- Mix cashews, zucchini, onion powder, garlic powder, smoked paprika, lemon juice and optionally salt into a homogeneous mass.
- Mix the pureed mixture with the caramelized onions and serve.
